thanksgiving turkey cupcakes - pumpkin spice cupcakes with cream cheese frosting



Last year for my youngest son's preschool Thanksgiving party, I signed up to make dessert. I knew wanted to make Thanksgiving turkey cupcakes, but I wanted something different from the ones I had made in previous years (see these and these ones as well). So using the "petal technique" that I've done on cakes in the past (originally done by Hungry Housewife! Go check out her tutorial!), I created these cute little turkeys!


I decided on a pumpkin cupcake to match the occasion (and also it's semi-healthy for the kids!). I used the same Martha Stewart recipe that I've used in the past, because it always comes out moist and fluffy!



For the frosting, I whipped up a batch of cream cheese buttercream and divided it into four, and colored the first three portions for the turkey's tail feathers.


The fourth portion I colored brown, for the turkey's head.


Using the petal technique, I created the first row of tail feathers with yellow frosting ...


Then the second row with orange frosting ...


And the third row with red frosting.


Then I piped a little round blob for the turkey's head!


Finally, I used black sugar pearls for the eyes, rainbow chips for the beak, and upside-down heart sprinkles for the wattle.

thanksgiving turkey cupcakes - apple cupcakes with cream cheese frosting


I made these Thanksgiving turkey cupckes last year, for my son Matthew's class Thanksgiving party. They were very rushed and last minute, but the idea was to pipe frosting in a design to look like the turkey's tail feathers. And I piped the face this time, instead of using an M&M like I did with the Thanksgiving turkey cupcakes I made a few years ago. (Those also used candy corn for the turkey tail feathers and turned out way cuter than these did, in my opinion.) Also I wanted something semi-healthy for the classroom of kids, so I made fresh apple cupcakes (recipe in my book, The Hello Kitty Baking Book!).


For the frosting, I used my favorite cream cheese frosting recipe (recipe also in my book!). I divided and tinted the frosting red, orange, yellow, and brown, and then used a pastry bag fitted with a leaf tip to pipe the feathers, starting with the red, then orange, and then yellow. Then for the turkey's face, I piped a little blob of brown frosting in the center of the last row of feathers (you can use a large round tip or even just a coupler for this).


Then for the details on the face, I piped little black eyes, used an orange rainbow chip for the beak, and an upside-down heart sprinkle for the wattle.


If you make these, be sure your frosting is cold when you pipe the tail feathers. Don't be lazy like me and pipe with warm frosting, because then your piped tail feathers will look all sloppy and messy like mine! Whoops!

thanksgiving turkey cupcakes - brown sugar pound cakes with bailey's irish cream frosting


After being inspired by Bakerella's Thanksgiving cake pops, I decided I wanted to make turkey cupcakes for Thanksgiving.  (And no, they are not made out of turkey!)  I went with brown sugar pound cakes (recipe from Martha Stewart once again), with a Bailey's Irish Cream frosting.  


Then I piped the turkey's body out of chocolate cream cheese frosting.  I added candy corn for the feathers, and an M&M for the face (I originally tried using Whoppers, but the eye balls didn't stand out enough).  I dotted the eyes with an edible food marker, added an orange rainbow chip for the beak, and an upside-down heart confetti sprinkle for the wattle.


I haven't had candy corn for years, but I remember loving them as a kid (I could eat them by the handful).  But when I tasted the candy this time, I couldn't believe how they were much too sweet!  So I ended up  removing most of them when eating the cupcake.

As for the cupcake and the frosting, I loved the combination.  The brown sugar pound cake was caramel-y and not too sweet, and the Bailey's in the frosting complimented the cake perfectly, and gave it just a little touch of Holiday cheer.
