My friend H introduced me to her friend S a few years ago, the day that the three of us stood in line at Macy's for hours to meet Sarah Jessica Parker at a perfume signing event. It was so much fun!
After that day, I've bumped into S here and there, and we eventually discovered that we share a love for food and food photography. Then one day recently, she asked me to make a cake for her birthday. She specifically requested the rose cake (that I love to make), which uses the rose cake method from I Am Baker. And since she requested either purple or white, I decided to make it a purple ombre rose cake, similar to my purple ombre petal cake, which would start with purple at the bottom and gradually grow lighter until it became white on the top.
For the cake layers I made my favorite homemade dark chocolate cake. I only used half the recipe, which filled two 6-inch cake pans. Then I filled the layers with chocolate mousse (recipe from the Triple Chocolate Mousse Cake from America's Test Kitchen).
Then I whipped up a batch of cream cheese buttercream, and did a quick crumb coat over the entire cake.
And then came the fun part - the piping of the roses. I divided the rest of the frosting into three parts - I left the first portion white, then the next portion I colored a light purple, and the third portion I colored a darker purple.
Then using a Wilton 1M tip and I Am Baker's rose cake method, I covered the top of my cake with white roses.
Next came the lighter purple roses, and finally the darker purple roses on the bottom.
Isn't it pretty? :)

DeleteThere is always a mysterious quality about ombre that makes the cake all the more adorable. Rose cakes are so intricate and lovely! I would have wanted one for my birthday but I know I will only end up with a whole mess than a rose. LOL!

DeleteI know this is wayyy late, so hopefully you still see it! I am giving this icing a shot to do these roses, but have never worked with an icing (homemade anyway) that has cream cheese in it. Should this be refrigerated or is it ok in a container on the counter? And how long do you think it might be good for? I made a batch today to practice the roses but won't need all of it for practice. The party I'm using it for is 8 days out and I'm stingy and hate to throw things away!! And will the cake be ok at room temp once iced like this or should I refrigerate? I'm terrified that these pretty little roses will slide into not so pretty little waves! Thanks so much!!!
Delete@csbtgtm - you'll need to refrigerate the icing if you don't use it right after mixing. after refrigerating, just re-whip before using. it should be good for maybe 4-5 days. i'm not sure about 8 days out though, i know sometimes if i leave frosting in the fridge too long it forms little hard bits in it, which lead to non-smooth icing.

DeleteMy baking is usually more rustic - country bumpkin style- but I tried this design and it was easy to get such an amazing effect, on even the most rustic of cakes, and I used it for a charity bake sale on a selection of cakes! Thank you so much the cakes were a real hit!

ReplyDeleteI was so excited to see this cake. I found it through Pinterest one day. This was after I had offered to make a wedding cake for my sister in law.
